Ingredients
  

Batter Ingredients

  • ½ Cup Unsalted Butter, Softened
  • 1 Cup Honey
  • 1 Large Egg At Room Temperature
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Light or Whole Grain Spelt Flour
  • 1 Teaspoon Baking Soda
  • 1 ½ Teaspoons Ground Cinnamon
  • ½ Teaspoon Salt
  • 1 Cup Golden Raisins
  • 1 Cup Unsweetened Applesauce
  • ¾ Cup Sliced Almonds

Instructions
 

Baking Instructions

  • Preheat oven to 350 degrees F. and lightly grease and flour a 9 inch spring-form pan.
  • Cream butter in large bowl, then gradually beat in honey until light and fluffy.
  • Add the egg and vanilla extract and mix well.
  • Combine the remaining dry ingredients in another bowl.
  • Add flour mixture and applesauce alternately to creamed mixture, beginning and ending with flour mixture.
  • Stir in the raisins.
  • Pour batter into the prepared pan.
  • Sprinkle the almonds over the top of the cake.
  • Bake for 35 to 40 minutes or until wooden pick inserted near center comes out clean.
  • Cool 10 minutes, then remove the sides.
  • Cool cake to room temperature, then enjoy!

Notes

Make sure to use room temperature egg for better mixing.
