Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • a pinch crushed red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 2 pieces boneless skinless chicken breast halves
  • ½ cup roasted mini peppers drained, plus some of the garlic cloves
  • ½ cup cherry tomatoes or grape tomatoes
  • ¼ cup pitted and halved Kalamata olives
  • ¼ cup crumbled feta cheese
  • Chopped fresh parsley

Instructions
 

  • Preheat oven to 375 degrees.
  • Combine the olive oil, lemon juice, oregano, crushed red pepper flakes, and salt and black pepper in the bottom of a baking dish.
  • Place the chicken breasts in the baking dish, then turn to coat so they're nicely coated with the oil/lemon juice/herb combination.
  • Place the roasted peppers, garlic from the peppers, cherry tomatoes and olives around the chicken breasts.
  • Bake for 30-35 minutes or until an instant-read thermometer registers 165 degrees in the center of each breast.
  • Sprinkle with feta cheese and parsley. Serve immediately.

Notes

You can also substitute chicken tenders or boneless skinless chicken thighs. Prep can be done 24 hours in advance and refrigerated.
