Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar or sweetener
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda optional for fluffiness
  • ½ teaspoon salt

Wet Ingredients

  • 1 ¾ cups milk
  • ¼ cup butter melted
  • 2 teaspoons pure vanilla extract
  • 1 large egg

Instructions
 

Preparation

  • Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large bowl. Make a well and add milk, melted butter, vanilla, and egg.
  • Whisk the wet ingredients together before folding them into the dry ingredients. Mix until smooth (a few lumps are okay).
  • Set the batter aside and allow to rest while heating a nonstick pan or griddle.
  • Heat over low-medium heat and lightly grease with butter. Pour ¼ cup of batter and spread gently.
  • Cook until golden, then flip and cook until golden again. Repeat with remaining batter.
  • Serve with honey, maple syrup, fruit, or plain.

Notes

For fluffier pancakes, add baking soda, but omit it if sensitive to taste. For self-raising flour, remove baking soda and adjust baking powder.
