Instructions
Full Recipe
Simmer chopped chillies in boiling water for 10 minutes. Strain, then blitz the adobo paste.
Brown the beef and cook it with adobo paste, then slow-cook for 2 ½ hours.
Remove meat, shred and skim off the braising liquid oil.
Toss shredded beef in skillet with 1 cup of braising liquid while heating.
Prepare tortillas by heating them in birria oil, then stuff with cheese, beef, onion, and cilantro.
Pan fry until golden-red and crispy, serve while hot with birria consommé for dunking.
Notes
Yield – Makes 22 – 25 tacos, depending on portion size.
