Salad Ingredients

  • 5 cups arugula
  • 1 cup blackberries
  • ¾ cup blueberries
  • 1 medium avocado diced
  • 1.5 cups cucumber sliced thinly
  • cup feta cheese
  • cup toasted hazelnuts

Vinaigrette

  • cup olive oil
  • 2 tablespoon freshly squeezed lime juice
  • 1 tablespoon maple syrup or other liquid sweetener
  • 2 tablespoon fresh mint finely chopped
  • ¾ teaspoon salt
  • to taste pepper

Preparation

  • Whisk together all ingredients for vinaigrette. Taste and adjust seasoning as desired.
