Instructions
 

Prepare the blackberry balsamic compote

  • In a saucepan, combine fresh blackberries, balsamic vinegar, sugar, and lemon juice.
  • Cook over medium heat until the mixture thickens into a syrupy compote, about 10-15 minutes.

Assemble the sandwiches

  • Lay slices of brie on half the sourdough slices.
  • Top with a generous amount of the blackberry balsamic compote.
  • Sprinkle chopped thyme on top of the blackberry mixture.
  • Place the remaining slices of sourdough on top to close the sandwiches.

Cook the sandwiches

  • Heat a skillet over medium heat and add butter.
  • Fry the sandwiches, turning regularly, until both sides are golden and the cheese is melted, about 5-8 minutes.

Notes
