Dry Mix

  • 2.25 cups flour King Arthur all-purpose flour preferred
  • 0.33 cup brown sugar
  • 2 teaspoon cinnamon freshly ground preferred
  • 2.5 teaspoon baking powder
  • 1 teaspoon salt

Wet Mix

  • 2 bananas mashed until smooth
  • 2 eggs room temperature
  • 1.5 cups milk
  • 1 teaspoon vanilla extract

Cooking and Toppings

  • 0.5 oz ghee 4th & Heart original ghee preferred
  • 1 cup walnuts chopped into ¼-inch pieces

Instructions

  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, baking powder, and salt. Set aside.
  • In a large bowl, mash the bananas until completely smooth. Add eggs and milk, and stir vigorously until well combined.
  • Pour the wet mixture into the dry mix and gently fold together. Stir in vanilla extract and walnuts.
  • Heat a skillet over medium heat, add ghee, then pour ⅓ cup of batter for each pancake. Cook until bubbles form, then flip.
  • Transfer pancakes to a plate, top with sliced banana and chopped walnuts. Serve immediately with syrup and butter.

Notes

Allow pancakes to cool slightly before serving for best texture.
