Butternut and Apple Bruschetta

Vegetables & Fruits
- 1 package frozen butternut squash (10 oz.)
- 1 unit apple cut and diced into small pieces
Bread
Condiments
- 6 tablespoon olive oil
- 3 tablespoon honey
- 2 tablespoon balsamic vinegar (Pomegranate Balsamic Vinegar recommended)
Spices
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon all spice
- 1 teaspoon cloves
- 2 tablespoon salt retain 1 tablespoon for later
- 1 tablespoon pepper
Cheese & Herbs
- 1 cup feta cheese
- 10 sprigs thyme
Cooking Instructions
Preheat the oven to broil on high at 525 degrees F.
Heat the Butternut squash according to package, but only halfway.
Toss the butternut squash and apples with oil, honey and spices, retain 1 tablespoon of salt.
Place the French Baguette slices on a greased cookie sheet and top with 1 tablespoon of mixture.
Sprinkle the remaining tablespoon of salt, ½ of the feta cheese and chopped thyme over the top of each slice of bruschetta.
Place in oven for 3-5 minutes, watching it so it doesn’t burn.
Remove and drizzle with balsamic vinegar and top with remaining feta cheese.
