Cheesy Baked Tacos

Ingredients
  

  • 6 pieces thin corn tortillas 5 to 6-inch wide
  • cooking spray for greasing the baking sheet
  • ½ cup refried beans
  • ½ teaspoon chili powder optional
  • 1 ½ cups Mexican-style blend shredded cheese
  • ½ cup salsa, sour cream, and/or guacamole for serving

Instructions
 

  • Preheat the oven to 450°F and arrange a rack in the center. Prepare a baking sheet with parchment paper.
  • Spread refried beans on one side of each tortilla, then arrange them on a platter or another baking sheet. Dust with chili powder if using, and prepare the cheese.
  • Remove the hot baking sheet from the oven, line it with parchment, and spray with cooking spray. Arrange tortillas, bean side up, on the baking sheet and top with cheese.
  • Bake for 1 to 2 minutes until the cheese melts. Fold each tortilla over to form tacos and press down lightly with a spatula.
  • Return to the oven and bake for 5 to 7 minutes until crispy on the bottom, then flip and bake for another 5 to 7 minutes.
  • Let cool for a few minutes and serve with salsa, sour cream, and/or guacamole.

Notes

Best served fresh but can be reheated in a 350°F oven or air fryer.
