Ingredients
  

Dough Ingredients

  • 2 ¼ cups all-purpose flour spooned & leveled
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened to room temperature
  • ¾ cup granulated sugar
  • 1 large egg at room temperature
  • 2 teaspoons pure vanilla extract

Filling Ingredients

  • 2 tablespoons butter melted and slightly cooled
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Icing Ingredients

  • 1 cup confectioners’ sugar
  • 3 tablespoons milk
  • ½ teaspoon pure vanilla extract

Instructions
 

Cookie Preparation

  • Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
  • In a large bowl, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg and vanilla and beat on high speed until combined, about 1 minute.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. The dough will be a bit soft.
  • Divide the dough into 2 equal parts. Roll each portion into a rectangle (about 9×7 inches) onto a floured surface to about ¼″ thickness.
  • Spread 1 tablespoon of melted butter onto each rectangle. Mix the granulated sugar and cinnamon, then sprinkle evenly over each.
  • Tightly roll up each rectangle into a 9-inch log and chill the logs for at least 2 hours.
  • Preheat the oven to 350°F (177°C). Line a large baking sheet with parchment paper.
  • Remove dough logs from the refrigerator, cut into ½ inch slices, and place slices onto baking sheets about 2 inches apart.
  • Bake for 10-11 minutes until lightly browned on the sides. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  • Whisk all the icing ingredients together and drizzle over cookies.

Notes

Baked cookies freeze well up to 3 months. Thaw overnight in the refrigerator. Cookie dough can be chilled for up to 2 days or frozen for up to 3 months before baking.
