Creamy Coconut Chicken with Garlic and Ginger

Ingredients
  

  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken thighs or chicken breasts
  • Salt to taste
  • Black pepper to taste
  • ¾ cup chopped sweet onion
  • 4 cloves garlic minced
  • 2 teaspoons grated fresh ginger
  • 1 small chili chopped (optional)
  • 1 stalk lemongrass thinly sliced
  • 2 ½ cups coconut milk
  • 1 ½ teaspoons soy sauce
  • 1 small cinnamon stick
  • 2 small bok choy halved lengthwise
  • cup chopped fresh cilantro
  • ½ to 1 lime Juice

Instructions
 

  • Preheat your oven to 375°F.
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
  • Season the chicken with salt and black pepper. Add it to the hot pan and cook for about 3 minutes per side, until lightly golden. Transfer the chicken to a plate.
  • Add the remaining tablespoon of olive oil to the same pan. Stir in the onion and cook for 3 to 4 minutes, until softened.
  • Add the garlic, ginger, chili if using, and lemongrass. Cook for 1 to 2 minutes, stirring often, until fragrant.
  • Return the chicken to the pan. Pour in the coconut milk and soy sauce. Add the cinnamon stick, then nestle the bok choy around the chicken. Sprinkle the cilantro over the top.
  • Transfer the pan to the oven and bake for 35 to 40 minutes, or until the chicken is fully cooked and tender.
  • Remove from the oven and squeeze fresh lime juice over the dish. Taste and adjust seasoning if needed.
  • Serve hot over rice or noodles, with extra cilantro on top.

Notes

Use full-fat coconut milk for best texture. Adjust chili for spice preference. Substitute vegetables as desired.
