This creamy potsticker soup is quick to make, thanks to frozen dumplings, and it is creamy with coconut milk, fragrant with ginger, and so delicious.

Ingredients
  

  • 1 tablespoon avocado oil
  • 1 bunch green onions, sliced, white and green parts separated
  • 1 quart chicken broth
  • 1 clove garlic, smashed
  • 1 inch ginger, thinly sliced
  • 2 tablespoons red curry paste
  • 1 tablespoon toasted sesame oil
  • 2 cans (14 ounce) coconut milk
  • 1 cup thinly sliced shiitake mushrooms
  • ½ cup shredded carrots
  • 1 bag (18.2 ounce) frozen potstickers, such as P.F. Chang's® Chicken Dumplings
  • sliced green onions and chili crisp for garnish

Instructions
 

  • Heat avocado oil in a large pot over medium heat. Add whites from the green onion and saute until softened.
  • Add chicken broth, garlic, ginger, curry paste, and sesame oil. Bring to a boil and simmer for about 10 minutes.
  • Using a slotted spoon, remove garlic and ginger. Add coconut milk, shiitake mushrooms, and carrots. Bring back to a boil.
  • Add frozen potstickers and cook until heated through, 6 to 8 minutes. Serve with green part of green onions and chili crisp.

Notes

You can also use mini potstickers, up to 24 ounces, in this recipe.
