  • 2 cups juicy strawberries, sliced Fresh strawberries for best flavor.
  • 1 medium English cucumber, thinly sliced Persian cucumbers can be used as a substitute.
  • ½ cup crumbled feta or goat cheese Optional, but adds richness to the salad.
  • ¼ cup fresh mint or basil leaves, chopped Adds aromatic flavor.

Dressing

  • 3 tablespoons olive oil Use good quality for best flavor.
  • 2 tablespoons fresh lemon juice or balsamic vinegar Adjust according to your taste preference.
  • 1 teaspoon honey To balance acidity.
  • to taste salt Season to your preference.

Optional add-ins

  • ¼ cup toasted almonds or sunflower seeds Adds crunch to the salad.

Instructions
 

Preparation

  • Wash and slice the strawberries and cucumber.
  • Chop the fresh herbs and prepare cheese if using.

Make the dressing

  • In a small bowl, mix olive oil, lemon juice (or balsamic vinegar), honey, salt and pepper until well combined.

Assemble the salad

  • In a large bowl, layer the strawberries and cucumbers.
  • Drizzle the dressing over the top and toss gently to combine.

Serve

  • Serve immediately for best flavor, but can be stored in the refrigerator for a short time.
