Phyllo Base

  • 8 sheets Phyllo dough
  • 1 cup Unsalted butter melted

Filling

  • 1 cup Semolina flour
  • 3 large Eggs
  • ¾ cup Granulated sugar
  • 2 cups Whole milk
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • 1 pinch Salt

Topping

  • ½ cup Honey warmed
  • 2 tablespoon Toasted sesame seeds

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly to ensure the pie releases easily after baking.
  • Place the first sheet of phyllo dough in the greased baking dish and brush generously with melted butter. Repeat this process with six more phyllo sheets, layering and buttering each one carefully to build a flaky and rich crust.
  • In a mixing bowl, whisk together semolina flour, eggs, granulated sugar, whole milk, ground cinnamon, ground nutmeg, and a pinch of salt until the mixture is smooth and well combined.
  • Pour the semolina custard mixture evenly over the phyllo base in the baking dish, making sure it spreads uniformly.
  • Cover the filling with the final layer of phyllo dough. Brush it with the remaining melted butter, and score the top lightly with a knife to let steam escape while baking.
  • Place the pie in the preheated oven and bake for 40 to 45 minutes, or until the top is golden brown, crisp, and the filling has set firmly in the middle. Remove from the oven and allow it to cool for about 10 minutes.
  • Drizzle the warmed honey generously over the cooled pie. Sprinkle toasted sesame seeds on top to add a nutty texture and elevate the flavor.
  • Slice the pie and serve either warm or at room temperature for a delightful dessert experience.

Notes

Handle phyllo dough gently and keep it covered with a damp cloth while working to prevent drying out. Warming the honey slightly before drizzling helps it soak into the pie better and enhances sweetness. To toast sesame seeds, heat them in a dry skillet over medium heat until golden and fragrant, about 2-3 minutes. This pie can be stored covered at room temperature for up to 2 days or refrigerated for up to 4 days. Reheat gently in a warm oven to retain crispness before serving.
