  • 1 cup cherry tomatoes halved
  • ½ cup radishes thinly sliced
  • 1 whole avocado diced
  • ½ cup feta cheese crumbled
  • ¼ cup nuts and seeds sunflower seeds or sliced almonds
  • ¼ cup fresh herbs basil or parsley
  • ½ cup seasonal fruits strawberries or blueberries

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey optional

Preparation

  • Gather all the fresh produce, nuts, seeds, and dressing components needed for the salad before starting preparation.
  • Thoroughly wash mixed greens under cold water, then dry them using a salad spinner or clean towels.
  • Halve the cherry tomatoes and thinly slice the radishes.
  • Peel the hard-boiled eggs carefully and slice them into even rounds.
  • Just before assembling the salad, dice the avocado.
  • Place the mixed greens into a large salad bowl.
  • Layer the halved cherry tomatoes, sliced radishes, diced avocado, and sliced hard-boiled eggs over the greens.
  • Sprinkle crumbled feta cheese evenly over the salad, then add the nuts, seeds, fresh herbs, and seasonal fruits.
  • In a small bowl, whisk together olive oil, fresh lemon juice, Dijon mustard, and honey until emulsified.
  • Drizzle the dressing over the salad just before serving, then toss gently to combine all ingredients.

Notes

For best avocado freshness, dice it last. Honey in the dressing is optional; omit for a vegan dressing. Use seasonal fruits for natural sweetness.
