  • 1 bunch kale

Bread

  • 2 cups bread cubes

Cheese

  • cup grated Parmesan cheese

Flavorings

  • 1 clove garlic, minced
  • 2 tablespoons lemon juice fresh
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste optional
  • cup mayonnaise
  • 3 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Remove kale stems and chop the leaves into bite-sized pieces. Massage with lemon juice for 1-2 minutes to soften.
  • In a bowl, whisk mayonnaise, lemon juice, garlic, Dijon mustard, anchovy paste, salt, and pepper. Slowly whisk in olive oil to create a smooth dressing.
  • Heat a pan with olive oil, add bread cubes, and toast until golden and crispy, about 5–7 minutes. Season with salt.
  • Toss the kale with the Caesar dressing until coated evenly.
  • Add the croutons and grated Parmesan, and toss again.
  • Serve fresh with extra Parmesan if desired.

Notes

Massage kale for better flavor and a more tender bite. Use fresh lemon juice and garlic for a brighter dressing. Toasted seeds or gluten-free bread make great crouton alternatives.
