Ingredients
  

  • 2 pounds chuck roast
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 ½ cups beef broth
  • 2 tablespoons soy sauce
  • 1 ½ tablespoons Worcestershire sauce
  • ¾ cup sliced pepperoncini peppers
  • cup pepperoncini juice
  • ¾ cup chopped giardiniera
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder or 2 minced garlic cloves
  • 1 tablespoon lemon juice
  • pinch salt
  • pinch black pepper
  • 6 slices provolone cheese
  • extra giardiniera optional
  • extra pepperoncini peppers optional

Instructions
 

  • Pat the chuck roast dry and season with salt and pepper.
  • Sear in olive oil over medium-high heat until browned on all sides.
  • Add broth, soy sauce, Worcestershire, pepperoncini, juice, giardiniera, and seasonings.
  • Cover and cook on low for 3 hours until tender.
  • Shred beef and return to juices for 10–15 minutes.
  • Mix aioli ingredients until smooth.
  • Warm rolls with provolone until melted.
  • Fill rolls with beef and top with giardiniera and aioli.
  • Serve hot with juices for dipping.

Notes

Let the beef rest in juices for maximum flavor. Adjust spice level with more or less giardiniera.
