Ingredients
  

Pickled Onions

  • medium red onion thinly sliced
  • 1 small garlic clove grated
  • ½ lime juice
  • 2 teaspoons vinegar
  • ½ teaspoon maple syrup
  • 2 tablespoons fresh cilantro chopped
  • 1 pinch salt

Wrap Filling

  • 2 cups cauliflower florets
  • 1 cup canned chickpeas drained and dried
  • 1 teaspoon garlic powder
  • ½ teaspoon ground coriander
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 tablespoon oil
  • to taste salt

Chipotle Sauce

  • 1 chipotle pepper finely chopped
  • cup plain yogurt
  • 1 tablespoon mayonnaise
  • ½ lime juice
  • 1 teaspoon maple syrup
  • 1 small garlic clove grated
  • 1 to 2 tablespoons water to adjust consistency
  • 1 pinch salt

Wrap Assembly

  • 2 to 3 pita breads
  • lettuce

Instructions
 

Preparation

  • Make pickled onions by mixing onion, garlic, lime juice, vinegar, maple syrup, cilantro, and salt.
  • Preheat oven to 425°F.
  • Toss cauliflower and chickpeas with oil and spices.
  • Spread on baking sheet and roast for 25 to 30 minutes.
  • Mix sauce ingredients until smooth.
  • Warm pita breads.
  • Assemble wraps with lettuce, filling, onions, and sauce.
  • Serve immediately.

Notes

Adjust sauce consistency with water. Store components separately for best texture. Roast fresh for optimal flavor.
