Ingredients
  

Beef

  • 800 g chuck beef, cut into 3.5cm cubes Note 1
  • 0.75 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoon olive oil plus more as needed

Filling

  • 30 g unsalted butter
  • 200 g mushrooms, smallish, halved larger ones quartered
  • 125 g streaky bacon, cut into cubes
  • 1 onion, cut into 2cm cubes
  • 2 garlic cloves, minced
  • 1 celery, cut into slices split wide end lengthwise
  • 1 carrot, halved and cut into slices quarter very thick end if needed
  • 330 ml Guinness Note 2
  • 2 cups beef stock homemade or store bought low sodium
  • 1 cup water
  • 0.25 teaspoon salt
  • 0.75 teaspoon coarsely crushed black pepper plus more as desired

Beurre Manié (sauce thickener)

  • 4 tablespoon flour
  • 60 g unsalted butter, softened

Pastry

  • 1 quantity shortcrust pastry homemade or store bought
  • 1 sheet puff pastry for lid
  • 1 egg lightly whisked

Serving

  • Ketchup or Aussie Tomato Sauce for serving

Instructions
 

Cooking Instructions

  • Preheat oven to 180°C/350°F (160°C fan).
  • Brown beef: Sprinkle beef with salt and pepper. Heat oil in pot over high heat and brown the beef in batches.
  • Wipe down pot to remove burnt bits if needed.
  • Cook bacon: Add bacon to cooled pot, cook until golden.
  • Cook mushrooms: Melt butter in pot and cook mushrooms until golden.
  • Cook vegetables: Add onion, garlic, carrot, and celery, cooking until onion is soft.
  • Oven slow cook: Add beef, bacon, Guinness, water, stock, salt, and pepper. Simmer, cover, and transfer to oven for 1 hour.
  • Add mushrooms and continue cooking for another hour.
  • Thicken sauce: Remove from oven, simmer on low for 20 minutes.
  • Mix together butter and flour for Beurre Manié, stir into sauce.
  • Cover pot and let it cool completely, preferably overnight.
  • Make shortcrust base and blind bake in pie dish.
  • Preheat oven to 200°C/390°F (180°C fan).
  • Bring filling to room temperature, fill pie shell.
  • Top with puff pastry, egg wash, and make an incision for steam.
  • Bake for 45-50 minutes until golden.
  • Let rest for 5 minutes before serving.

Notes

Cooling filling is essential for proper pastry cooking. This dish is best served hot and fresh.
