Ingredients
  

For the Salad

  • 2 medium Mango ripe but firm
  • 1 medium Avocado ripe yet firm
  • 1 medium Red Bell Pepper or yellow/orange bell pepper
  • ¼ medium Red Onion use green onions for milder taste
  • 1 medium Cucumber or zucchini
  • ¼ cup Fresh Cilantro
  • ¼ cup Fresh Mint omit if unavailable
  • ¼ cup Fresh Basil

For the Dressing

  • 2 tablespoons Lime Juice or lemon juice
  • 1 tablespoon Maple Syrup or honey/agave syrup
  • 2 tablespoons Olive Oil or avocado oil
  • ½ teaspoon Salt

Instructions
 

Making the Salad

  • Whisk together lime juice, maple syrup, olive oil, and salt in a small container.
  • Dice the mangoes, red bell pepper, red onion, cucumber, and avocado into bite-sized pieces.
  • Combine the diced ingredients in a large mixing bowl, adding in the freshly chopped cilantro, mint, and basil.
  • Pour the dressing over the salad mix, then gently toss to coat all ingredients evenly.
  • Taste your salad and adjust the seasoning with more salt or lime juice if necessary.
  • Serve immediately or chill for an hour to enhance flavor infusion.
