Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • ½ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional) for a spicy kick

Instructions
 

  • In a small bowl, whisk together olive oil, minced garlic, salt, and pepper.
  • Place the chicken breasts in a large resealable bag. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 30 minutes.
  • Heat your grill to medium-high heat.
  • Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side or until cooked through and juices run clear.
  • In a small saucepan, bring balsamic vinegar to a boil over medium heat. Reduce to a simmer and let it cook for about 10 minutes, or until it thickens slightly.
  • Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken into strips.
  • On a serving plate, layer the grilled chicken, halved cherry tomatoes, and slices of mozzarella cheese.
  • Top with fresh basil leaves and drizzle with the balsamic sauce.
  • Sprinkle with additional salt and pepper if desired.
