  • 1.75 cups Warm Water Ensure temperature is warm, not hot.
  • 2 teaspoon Sugar Optional if using instant yeast.
  • 1 packet Active Dry Yeast Ensure yeast is fresh and bubbly.
  • 2 cups Bread Flour Can swap with all-purpose flour for a softer texture.
  • 2 cups All-Purpose Flour
  • 2 teaspoon Salt
  • 6 tablespoon Olive Oil Flavored oils can be used for extra taste.

Filling and Glaze Ingredients

  • 1 jar Raspberry Preserves Can swap with jams like strawberry or apricot.
  • 2 cups Confectioners’ Sugar
  • 2-4 tablespoon Whole Milk As needed for glaze consistency.

Preparation Steps

  • Combine warm water and sugar in a bowl. Sprinkle the active dry yeast on top and let it sit for about 5 minutes, until it becomes bubbly and frothy.
  • In a stand mixer, combine the bubbly yeast mixture with both flours and salt. Mix on low speed for 2-3 minutes until a sticky dough forms.
  • Shape the dough into a ball and coat it with olive oil. Place it in a lightly greased bowl, cover it with a clean towel, and let it rise until it doubles in size—about 1 hour.
  • Grease a 9x13-inch baking pan. After the dough has risen, punch it down gently and place it in the prepared pan.
  • Set your oven to 425°F while the dough is doing its second rise.
  • Once the dough has risen, poke holes all over the surface and spread raspberry preserves over it.
  • Place the focaccia in the preheated oven and bake for 18-22 minutes, or until golden brown.
  • In a medium bowl, mix the confectioners’ sugar with milk until you achieve your desired glaze consistency. Pour this glaze over the top once cooled.
  • Cut the focaccia into squares and serve warm.

Notes

Optional: Sprinkle with powdered sugar for additional sweetness before serving.
