Dough Ingredients

  • 3.75 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 1 cup warm water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter melted

Boiling Solution

  • 8 cups water
  • 0.5 cups baking soda

Egg Wash Ingredients

  • 1 large egg
  • 1 tablespoon water
  • coarse sea salt

Preparation Steps

  • In a bowl, mix warm water and sugar, then add yeast. Let sit 5–10 minutes until foamy.
  • Add salt and melted butter, then gradually mix in flour until dough forms.
  • Knead dough for 8–10 minutes until smooth and elastic.
  • Place dough in greased bowl, cover, and let rise for 1 hour or until doubled.
  • Bring 8 cups water to a boil and add baking soda carefully.
  • Divide dough into portions, roll into ropes, and cut into bite-sized pieces.
  • Boil bites in baking soda bath for 20–30 seconds, then remove.
  • Place on baking sheet, brush with egg wash, and sprinkle salt.
  • Bake at 425°F (220°C) for 12–15 minutes until golden brown.
  • Let cool slightly and serve warm.

Notes

Use fresh yeast for best rise and texture. Do not skip the baking soda bath for authentic pretzel flavor. Avoid overcrowding the baking tray to ensure even baking.
