Vegetables

  • 1 pound fresh green beans trimmed
  • 1 pound carrots peeled and sliced into thin rounds

Glaze

  • 3 tablespoons honey
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)

Preparation

  • Rinse the green beans under cold water and trim the ends.
  • Peel the carrots and slice them into thin rounds.

Cooking

  • In a large pot of boiling salted water, add the green beans. Blanch for about 3-4 minutes until bright green and slightly tender.
  • After blanching the green beans, add the sliced carrots to the pot. Continue boiling for an additional 4-5 minutes until both vegetables are tender but still crisp.
  • Remove the pot from heat and carefully drain the vegetables in a colander. Set aside.
  • In the same pot over medium heat, melt the butter. Stir in the honey, salt, and pepper. Allow the mixture to bubble for about 1 minute.
  • Add the drained green beans and carrots back into the pot. Toss the vegetables in the honey glaze until they are well coated.
  • Cook for an additional 2-3 minutes, stirring occasionally, until the vegetables are heated through and the glaze thickens slightly.
  • Remove from heat and sprinkle with fresh parsley before serving.
