Ingredients
  

Cake

  • ½ cup unsalted butter softened
  • ½ cup shortening
  • 2 cups granulated sugar
  • 5 large eggs separated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Frosting

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Garnish

  • ½ cup chopped pecans optional

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  • Cream together butter, shortening, and sugar until light and fluffy.
  • Add egg yolks one at a time, mixing well after each addition.
  • In a separate bowl, sift together flour and baking soda.
  • Add dry ingredients to the creamed mixture alternately with buttermilk, starting and ending with flour.
  • Mix in vanilla extract, shredded coconut, and chopped pecans.
  • Beat egg whites in a separate bowl until stiff peaks form, then gently fold into the batter.
  • Divide batter evenly into prepared pans and smooth the tops.
  • Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  • Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting and Assembly

  • Prepare frosting by beating cream cheese and butter until smooth.
  • Add vanilla extract and gradually mix in powdered sugar until creamy.
  • Assemble cake layers with frosting between each layer, then frost the top and sides.
  • Garnish with chopped pecans if desired and serve.

Notes

Use room temperature ingredients for a smoother batter. Fold egg whites gently to maintain a light structure. Chill the cake before frosting to minimize crumbs. Store in the refrigerator due to frosting.
