Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1.5 cups cold buttermilk Use cold to prevent overmixing.
  • 0.5 cups unsalted butter 1 stick, melted
  • 1 tablespoon lemon zest Use fresh for best flavor.
  • 1 tablespoon fresh lemon juice

Berries

  • 1 cup fresh or frozen blueberries Do not thaw if frozen.

Glaze

  • 0.5 cups powdered sugar
  • 1 tablespoon lemon juice For glaze.

Baking Instructions

  • Preheat your oven to 450°F (232°C). Place the butter in an 8×8 inch baking dish and let it melt in the oven. Remove once fully melted.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Add lemon zest and blueberries to the dry ingredients and gently toss to combine.
  • Pour in the buttermilk and fresh lemon juice. Mix just until combined—do not overmix.
  • Transfer the dough to the baking dish with melted butter. Gently spread it evenly to the edges.
  • Score the top into 9 squares with a knife, not cutting all the way through.
  • Bake for 25–28 minutes until golden brown and a toothpick inserted comes out clean.
  • Let cool for 5–10 minutes before adding glaze.
  • Make the glaze by whisking powdered sugar with lemon juice until smooth. Drizzle over the warm biscuits before serving.

Notes

Use cold buttermilk to help create a tender dough and prevent overmixing. For the best lemon flavor, use fresh lemon zest and juice—not bottled.
