Ingredients
  

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • ½ cup freshly squeezed lemon juice about 2–3 lemons
  • Zest from 1-2 lemons lemon zest
  • a pinch of salt

Instructions
 

  • In a medium saucepan, combine the heavy cream and granulated sugar. Stir over medium heat until the sugar is fully dissolved.
  • Bring the cream mixture to a gentle boil. Allow it to simmer for about 2-3 minutes.
  • After simmering, remove the pan from the heat.
  • Stir in the freshly squeezed lemon juice, lemon zest, and a pinch of salt into the heated cream mixture. Mix well until combined.
  • If desired, strain the mixture through a fine sieve into a bowl or measuring jug to remove the lemon zest bits.
  • Distribute the posset mixture evenly into serving glasses or ramekins.
  • Cover each glass with cling film and refrigerate for at least 4 hours, or until set.
  • When ready to serve, remove from the refrigerator and let them sit for a few minutes at room temperature before garnishing if desired.

Notes

For the best flavor and texture, chill overnight before serving.
