Equipment

  • large sauté pan

Ingredients

  • 0.5 cup Panko or homemade bread crumbs
  • 2 tablespoon lukewarm water
  • 1 pound ground beef
  • 1 large egg
  • 0.25 cup Pecorino Romano or Parmesan cheese
  • 1 teaspoon chopped fresh basil
  • 0.5 onion finely minced
  • 1 clove garlic minced on microplane
  • 1 teaspoon salt
  • 0.25 teaspoon oregano
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 cup extra virgin olive oil for cooking

Instructions

  • Mix together the breadcrumbs and water and set aside.
  • Combine the beef, egg, cheese, basil, onion, garlic, salt, oregano and pepper to taste. Using your hands, mix the ingredients together. Blend the bread crumb mixture into the meat mixture.
  • Shape into 2-inch balls.
  • Heat oil in a large sauté pan. When oil is very hot but not smoking, fry meatballs in batches. When the bottom half of the meatball is brown and slightly crisp, turn and cook the top half.
  • Remove from heat and drain on paper towels.
  • Finish the meatballs by cooking them in simmering marinara sauce for about 15 minutes.

Notes

Serve with garlic bread and a salad for a complete meal.
