Preparation Steps

  • Line two baking trays with parchment paper and lightly spray with cooking spray to prevent sticking.
  • Fill a pot with about 1 inch of water and bring to a simmer. Place a heatproof bowl over the pot, ensuring it does not touch the water.
  • Add caramel candies and whole milk to the bowl. Stir continuously for about 10 minutes until fully melted and smooth.
  • Remove from heat and stir in chopped pecans and flake sea salt until evenly combined.
  • Using a tablespoon, scoop the mixture into small mounds onto the prepared trays. Let them sit briefly to firm up.
  • In a clean bowl over simmering water, melt the milk chocolate wafers, stirring occasionally for 3–5 minutes until smooth.
  • Dip each caramel pecan mound into the melted chocolate using a fork, ensuring full coating.
  • Place coated clusters back onto the parchment-lined tray and sprinkle with additional sea salt if desired.
  • Refrigerate for 10–15 minutes until the chocolate is fully set.
  • Store in an airtight container with parchment between layers and enjoy.

Notes

Toast pecans beforehand to enhance their flavor and crunch. Stir caramel constantly while melting to avoid burning. If caramel becomes too soft, chill briefly before dipping in chocolate.
