Ingredients
  

  • 8 oz egg noodles
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 15 oz can tomato sauce
  • ½ cup sour cream
  • 2 oz cream cheese, softened
  • 1 teaspoon Italian seasoning optional
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup crushed buttery crackers like Ritz
  • 2 tablespoon melted butter

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles in salted boiling water until al dente. Drain and set aside.
  • In a large skillet, brown ground beef with diced onion over medium heat until beef is no longer pink and onion is soft. Drain any grease.
  • Stir in garlic, Italian seasoning, salt, and pepper. Cook 1 more minute.
  • Add tomato sauce, sour cream, and cream cheese. Stir until smooth and creamy. Simmer on low for 3–5 minutes.
  • Lightly grease a 9x13-inch casserole dish. Spread noodles in the bottom of the dish.
  • Pour the beef mixture over the noodles and spread evenly.
  • Top with cheddar and mozzarella cheeses.
  • In a small bowl, mix crushed crackers with melted butter. Sprinkle over the top.
  • Bake uncovered for 20–25 minutes, until hot and bubbly with a golden topping. Let rest 5–10 minutes before serving.

Notes

To make ahead: Assemble the casserole and refrigerate for up to 24 hours. Add 10–15 minutes to the bake time. To freeze: Wrap tightly and freeze unbaked. Bake from frozen at 350°F for 45–60 minutes. Add-ins: Try peas, mushrooms, or bell peppers for extra veggies. For a spicy kick: Add red pepper flakes or use pepper jack cheese.
