  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar

  • ¾ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • 2 cups old-fashioned rolled oats

Filling Ingredients

  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream

Baking Instructions

  • In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in pumpkin puree, egg, and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  • Add dry ingredients to wet mixture and stir until just combined.
  • Fold in rolled oats gently to maintain texture.
  • Scoop dough onto a parchment-lined baking sheet, spacing them evenly.
  • Bake at 350°F (175°C) for 10–12 minutes or until edges are golden and centers are set.
  • Let cookies cool completely on a wire rack.
  • In a mixing bowl, beat cream cheese and powdered sugar until smooth.
  • Add heavy cream and beat until the filling is light and fluffy.
  • Spoon or pipe filling onto the flat side of a cookie and sandwich with another.
  • Press gently to spread filling evenly, then serve or chill.

Notes

Chill the dough if it’s too soft to help prevent the cookies from spreading too much. Make sure the cookies are fully cooled before assembling to avoid melting the cream. For a cleaner presentation, use a piping bag to fill the cookies.
