Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ½ cup sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup non-dairy milk (almond, oat, or soy)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
  • 1 cup powdered sugar (for glaze)
  • 2 to 3 tablespoons non-dairy milk (for glaze)
  • 2 tablespoons rainbow sprinkles

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a donut pan.
  • Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • In another bowl, combine non-dairy milk, vinegar, coconut oil, and vanilla. Let sit for 1 minute.
  • Pour wet ingredients into dry and mix until just combined—do not overmix.
  • Transfer batter into a piping bag and pipe into donut pan, filling each about ¾ full.
  • Bake for 12–14 minutes, until golden and a toothpick comes out clean. Cool in pan for 5 minutes.
  • Mix powdered sugar and non-dairy milk to make glaze. Dip each donut and top with sprinkles. Let set before serving.

Notes

Let the donuts cool completely before glazing to prevent the glaze from melting off. Use a piping bag to neatly fill the donut cavities and avoid overflow. Customize the glaze with extracts like almond or maple for extra flavor.
