Ranch Garlic Parmesan Chicken Skewers

Ingredients
  

Chicken

  • 2 lbs chicken tenders thighs or breast
  • 2 tablespoon olive oil

Garlic Parmesan Butter Sauce

  • 1 stick butter
  • 8-10 cloves garlic minced
  • ½ cup parmesan grated
  • 1 tablespoon hot sauce more if desired
  • 2 teaspoon red pepper flakes
  • cup fresh parsley minced
  • 1 tablespoon dry ranch seasoning
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder

Chicken Seasonings

  • 1.5 tablespoon dry ranch seasoning
  • 1 teaspoon dried dill
  • 2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

Prep and Skewer Chicken

  • Soak your wooden skewers in water for at least 30 minutes.
  • Combine the chicken seasoning mixture in a small bowl and set aside. Cut chicken into 3" pieces and place in a large bowl or ziptop bag. Toss with olive oil and spices until well coated.
  • Pack the chicken onto each skewer tightly without space to ensure maximum juiciness.

Make the Garlic Parmesan Butter Sauce

  • Add butter and garlic to a microwave-safe bowl and heat until partially melted. Stir in red pepper flakes, hot sauce, seasonings, and parmesan until combined.
  • Reserve ⅓ of sauce for basting par-cooked chicken and the rest for cooked chicken to avoid cross contamination.

Cook The Chicken

  • Cook 2-3 skewers at a time in an air fryer at 400 degrees for 5 minutes, flip, baste with sauce, and cook an additional 2 minutes.
  • Flip, baste with more sauce, and cook for another 5-6 minutes until the internal temperature reaches 165 degrees.
  • Finish with a final basting of the reserved garlic sauce and serve with extra parmesan.

Notes

Oven Preparation: Preheat oven to 450 degrees and bake skewers on lined baking sheet for 14 minutes, flipping halfway. Broil for 2 additional minutes. Grill Preparation: Preheat grill to medium-high and cook skewers for 5-6 minutes per side, basting with butter throughout.
