Ingredients
  

Dough Ingredients

  • 1 cup whole milk warmed to about 100°F (38°C)
  • 6 Tablespoons granulated sugar divided
  • 1 Tablespoon active dry or instant yeast
  • 5 Tablespoons unsalted butter melted and slightly cooled
  • 2 large eggs at room temperature
  • 1 teaspoon salt
  • 4 cups bread flour spooned & leveled

Chocolate Filling

  • 6 Tablespoons unsalted butter softened to room temperature
  • ½ cup packed light or dark brown sugar
  • 2 Tablespoons unsweetened cocoa powder natural or dutch process
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ¾ cup semi-sweet chocolate chips or finely chopped chocolate bar

Espresso Icing

  • 3 Tablespoons heavy cream
  • 1 teaspoon espresso powder
  • 1 and ½ cups confectioners' sugar sifted
  • ½ teaspoon pure vanilla extract

Instructions
 

Making the Rolls

  • Whisk the warm milk, 2 Tablespoons sugar, and the yeast together in a mixing bowl. Cover and let sit for about 5 minutes until foamy.
  • Add the remaining sugar, butter, eggs, salt, and 1 cup of flour, and beat on medium speed for 1 minute. Scrape the sides of the bowl.
  • Add 3 cups of flour, lower speed, and mix until a soft dough forms.
  • Knead the dough for 6-8 minutes until it’s soft and slightly tacky.
  • Grease a bowl and place the dough inside to rise for 2 hours or until doubled in size.
  • Punch down the dough, roll it into a rectangle, and prepare the filling by mixing all ingredients together.
  • Spread the filling on the dough, roll it up tightly, and cut into 12 even pieces.
  • Place in a greased baking pan and allow to rise for another hour.
  • Preheat the oven to 350°F (177°C) and bake for 25-28 minutes until lightly browned.
  • Make the icing by whisking cream, espresso powder, confectioners' sugar, and vanilla together. Drizzle over warm rolls.
  • Store leftover rolls at room temperature for up to 2 days or in the fridge for up to 5 days.

Notes

To prepare the night before, follow steps 1 to 7, cover tightly, and refrigerate overnight. Bring to room temperature before baking.
