Ingredients
  

Root Vegetables

  • 2 medium sweet potatoes cubed
  • 2 large carrots sliced
  • 1 large red onion quartered

Beef

  • 2.5 pounds boneless beef chuck roast

Oils and Seasonings

  • 2 tablespoons canola oil
  • 4 cloves garlic minced
  • 1 tablespoon all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 0.25 teaspoon ground cinnamon
  • 1 tablespoon grated orange zest
  • 1 teaspoon baking cocoa

Canned Goods

  • 1 can tomato sauce 15 ounces
  • 1 can pineapple chunks in juice 15 ounces

Condiments

  • 1 tablespoon Worcestershire sauce

Instructions
 

Cooking Steps

  • Place potatoes, carrots, and onion in a 6-qt. slow cooker.
  • Place a large skillet over medium-high heat and add the oil. Season the beef with salt and pepper. Once the oil is hot, add the beef and brown it on all sides. Transfer the meat to the slow cooker.
  • Add the rest of the ingredients.
  • Cover and cook on low for 7-8 hours or on High for 4-5 hours, until the beef and vegetables are tender.
  • Let the meat rest for 15 minutes before serving it.

Notes

The best cut of meat for this recipe is a chuck roast because it is a tougher cut with a lot of connective tissue. Check the sweet potatoes about an hour or two before it is supposed to be done. If they start to get too soft, remove them and store them in the fridge until the rest of the food is finished. Add a cornstarch slurry to thicken the gravy if desired.
