Ingredients
  

For the Rice Base

  • 2 cups Sushi Rice Rinse thoroughly before cooking.
  • ¼ cup Rice Wine Vinegar Can substitute with apple cider vinegar.
  • 2 tablespoons Sugar Adjust for desired sweetness.
  • 1 teaspoon Salt Essential for flavor.

For the Salmon Mixture

  • 1 pound Salmon Fillets Canned salmon can be used for convenience.
  • 2 tablespoons Soy Sauce Use tamari for gluten-free.
  • 4 ounces Cream Cheese Use dairy-free for a vegan option.
  • 3 tablespoons Mayonnaise Kewpie is recommended.
  • 2 tablespoons Sriracha Sauce Can substitute with sambal oelek.

For the Toppings

  • 1 tablespoon Furikake Seasoning Enhances flavor.
  • 1 medium Avocado Add just before serving.
  • 1 medium Cucumber Provides crunch.
  • 2 tablespoons Green Onions Adds brightness.
  • 2 sheets Nori Sheets For scooping.
  • to taste Unagi Sauce Optional for extra flavor.

Instructions
 

Preparation

  • Rinse the sushi rice thoroughly until the water runs clear, then cook according to package instructions. Mix in rice vinegar, sugar, and salt.
  • Season the salmon fillets with soy sauce and cook in an air fryer at 400°F for about 10 minutes or in the oven for 15-20 minutes until fully cooked. Flake the salmon into small pieces.
  • Combine flaked salmon, cream cheese, mayonnaise, and sriracha in a bowl until creamy.
  • Preheat the oven to 425°F. Press seasoned sushi rice into a lined baking dish, sprinkle furikake over the top, and layer the salmon mixture evenly.
  • Bake in the oven for about 15 minutes or until heated through and the top is slightly golden.
  • Remove from the oven, drizzle with mayonnaise, and garnish with avocado, cucumber, and green onions.
  • Serve with nori sheets on the side for scooping.

Notes

Optional: Drizzle with unagi sauce before serving for an extra kick. Leftovers can be stored in an airtight container for up to 2 days in the fridge or frozen for up to 3 months.
