  • 1 lb frozen popcorn chicken Can be substituted with grilled chicken breast or tofu.

For the Sauce

  • ½ cup BBQ sauce Sweet or smoky variations work well.
  • ½ cup orange marmalade Adds sweetness and brightness.
  • 2 tablespoon low-sodium soy sauce Adjust according to taste.
  • 1 tablespoon rice vinegar For tanginess.

For Serving

  • 2 cups rice Jasmine or basmati preferred.
  • 3 cups mixed vegetables Broccoli, carrots, and snap peas recommended.

Preparation

  • Preheat the oven and bake the frozen popcorn chicken according to package directions, about 20-25 minutes.
  • In a small saucepan, combine BBQ sauce, orange marmalade, soy sauce, and rice vinegar. Heat on medium, stirring occasionally, until it bubbles, then reduce to low and simmer.
  • Taste the sauce and adjust flavors as necessary. If it thickens too much, add a bit of water.

Assembly

  • Once the chicken is golden and crispy, transfer it to a heat-proof bowl.
  • Pour the bubbling sauce over the chicken and use tongs to gently toss to coat.

Serving

  • Serve the orange chicken alongside cooked rice and a side of colorful vegetables for a complete meal.

Notes
