For the pork and rub

  • 4 pieces pork chops about 1-inch thick
  • 1.5 teaspoons salt
  • 0.5 teaspoons freshly cracked black pepper
  • 0.75 teaspoons garlic powder
  • 0.5 teaspoons onion powder
  • 0.5 teaspoons smoked paprika
  • 0.25 teaspoons chili powder
  • 4 teaspoons extra virgin olive oil

For the glaze

  • 3 tablespoons honey
  • 0.25 cups Dijon mustard
  • 0.25 teaspoons cinnamon
  • 0.5 teaspoons fresh thyme leaves finely chopped

  • Combine salt, freshly cracked black pepper, garlic powder, onion powder, smoked paprika, and chili powder in a small bowl, mixing thoroughly. In a separate bowl, whisk together honey, Dijon mustard, cinnamon, and thyme until well blended. Set aside.
  • Pat the pork chops dry with paper towels. Rub both sides with olive oil, then generously coat with the spice rub, pressing gently. Let them sit for a few minutes.
  • Preheat your grill to 375-400°F. Place the seasoned pork chops on the grill and cook for 3-4 minutes without moving. Flip and cook for another 3-5 minutes until temperature reaches 135-140°F.
  • During the last minute, brush the glaze onto the pork chops, let it caramelize for 30 seconds, then flip and glaze the other side.
  • Let the pork chops rest for 5 minutes before serving. Serve with extra glaze on the side.
