Ingredients
  

For the chicken base

  • 3.5 lb chicken breast boneless skinless
  • 0.75 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2.5 cups chicken broth
  • 0.5 teaspoon smoked paprika

For the pasta and assembly

  • 16 oz pasta Barilla rotini preferred
  • 20 oz cream cheese cut into 1-inch cubes
  • 1 packet ranch mix Hidden Valley
  • 1 cup water
  • 1 cup cheddar freshly shredded

For the topping

  • 8 slices bacon crisped and crumbled into ½-inch bits
  • 1.25 cups cheddar
  • 3 green onions thinly sliced on the bias

Instructions
 

Preparation

  • Cook the bacon in a skillet over medium-high heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate and crumble into roughly ½-inch pieces once cooled.
  • Combine salt, pepper, garlic powder, onion powder, and smoked paprika in a small bowl.

Cooking Chicken

  • Place the chicken breasts in your crockpot and sprinkle evenly with the seasoning blend. Pour in the chicken broth to cover most of the chicken. Cover and cook on LOW for 6-8 hours until the chicken is tender.

Cooking Pasta

  • About 30 minutes before the chicken is done, bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  • Cut the cream cheese into 1-inch cubes.
  • In a small bowl, whisk together the ranch mix with 1 cup of water.

Finishing Up

  • Remove the chicken from the crockpot, shred it, and return to the pot. Add the cooked pasta, cream cheese cubes, ranch mixture, and 1 cup of cheddar. Stir well.
  • Turn the slow cooker to HIGH and cook uncovered for 20-30 minutes, stirring occasionally.
  • Transfer pasta to serving bowls and top with bacon, remaining cheddar, and green onions. Let sit for 2-3 minutes before serving.

Notes

Serve hot while the sauce is still creamy and the cheese is warm.
