Ingredients
  

  • 1 teaspoon oil
  • 3 cloves garlic, chopped
  • 10 ounces fresh baby spinach
  • 16 ounces vegan cream cheese, room temperature
  • cup vegan mayo
  • 1 14-ounce can artichoke hearts, drained and chopped
  • ¼ cup vegan parmesan
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 400°F.
  • Heat oil in a large pan on medium heat. Saute garlic until browned, about 2 minutes. Add in spinach and saute until wilted. Remove from heat.
  • In a baking dish, mix together the vegan cream cheese, mayo, artichoke hearts, sautéed spinach, salt, and pepper.
  • Bake for 15-20 minutes, or until the dip is hot and bubbly. Serve warm!
