- 1 teaspoon oil
- 3 cloves garlic, chopped
- 10 ounces fresh baby spinach
- 16 ounces vegan cream cheese, room temperature
- ⅓ cup vegan mayo
- 1 14-ounce can artichoke hearts, drained and chopped
- ¼ cup vegan parmesan
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Preheat oven to 400°F.
Heat oil in a large pan on medium heat. Saute garlic until browned, about 2 minutes. Add in spinach and saute until wilted. Remove from heat.
In a baking dish, mix together the vegan cream cheese, mayo, artichoke hearts, sautéed spinach, salt, and pepper.
Bake for 15-20 minutes, or until the dip is hot and bubbly. Serve warm!
