Ingredients
  

Meat and Vegetables

  • 1 pound beef stew meat
  • 2 cups baby carrots
  • 2 ribs celery sliced or diced
  • 2 tablespoon minced dried onion
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • cup water
  • 1 can Campbell’s tomato soup (10.5 oz)
  • 2 tablespoon minute tapioca (or ¼ cup flour)
  • 1.5 to 1.75 pounds peeled Russet potatoes
  • 2 tablespoon butter
  • ¼ cup milk
  • salt and pepper to taste

Cooking Instructions

  • Add beef, carrots, celery, onion, salt, pepper, water, tomato soup and tapioca into slow cooker. Stir.
  • Place the potatoes on top.
  • Cover slow cooker and cook on low for 5-7 hours, or until potatoes and beef are fork tender.
  • Use tongs to place potatoes into a mixing bowl. Mash the potatoes. Stir in the butter, milk and salt and pepper to taste.
  • Salt and pepper the beef mixture to taste.
  • Place a scoop of potatoes onto each serving plate and ladle a scoop of the beef mixture over the top. Enjoy!
